6-B Fort Myers (Fla.) News-Press, June 24, 1965 Strawberry Fritters, Delightfully Different STRAWBERRY FRITTERS How old-fashioned cooks loved fritters. Pick up one of their cook books and the chances are you'll find recipes for these delicacies. Clam, corn, oyster and tomato fritters were favorites for the main course of a meal. But dessert fritters- apple, banana, orange and strawberry were also served. The strawberry fritters are probably the most unusual of all, and it's this recipe we've resurrected in modern style.

Our berry fritters get a coating of almonds, then they are dipped in beaten egg and rolled in graham cracker crumbs. The corn syrup makes the almonds stick to the berries, and the egg helps the graham cracker crumbs to adhere. To make life easy, we use the graham cracker crumbs that come in a handy package. Each of these strawberry fritters is a delightful mouthful of surprise: the berry sweet, fresh and still cool, the coating slightly crunchy. In the following recipe, we suggest that you serve these fritters with a favorite pudding sauce.

Holding berry on fork again, dip into egg and allow excess egg to frip off; roll in graham cracker crumbs. Repeat process with remaining berries. Chill for 2 or 3 hours.

Fill a heavy saucepan onethird full of corn oil; heat over medium heat to 375 degrees on a candy or fat thermometer, or until a 1-inch cube of bread turns brown in 40 seconds. Fry batches of berries, without crowding, until lightly browned -about 30 seconds. If you like, you may fry the berries in a basket, but do not crowd. Serve at once with any favorite pudding sauce. Makes 6 servings5 berries per portion.

Trooper Honored For Duty, Bravery TALLAHASSEE For outstanding performance of duty and heroism in Taylor Florida's highway patrolmen chose fellow-officer 0. Whittle their first "Trooper of the year." Florida Highway Patrol spokesmen said Wednesday Whittle will be presented with the first "Trooper of the Year" award at a luncheon in his honor at St. Augustine Friday. The award was sponsored by the Florida Petroleum Council. Whittle's act of bravery 0c- curred when he captured two armed robbers south of Perry in June 1964.
